The following article was featured in "Southern Distinction" magazine's August 2009 issue: FROM THE SWIRL TO THE SNIFF Are you looking for something unique and different to do this summer? Is your social life becoming a bit ho- hum? Wouldn’t it be nice to find something that could influence your life forever? There is such a place. The Classic Wine School (rmclassicwines.com) is located approximately 7 miles south of I-20 (Exit 130) on Highway 44, just off Linger Longer Road in the Lake Oconee Shopping Village at 1216 Commerce Drive, Greensboro, Georgia. You will find the School offers a diverse curriculum suited for the novice or the more advanced student. The course (outline below) will increase your knowledge of all aspects of wines. Think about the last time you visited a restaurant and the waiter/sommelier handed you a wine list to select a wine for the table. Were you a bit intimidated? Was the list like a foreign language to you? Did you select the wine, or was you first inclination to hand the list to someone else to make the selection! The Classic Wine School will teach you what to look for. You will become very comfortable in the selection process. Never again will you be intimidated or embarrassed by a wine list! Upon completion of the course, you will have a better understanding of the different grape varietals used in the fermentation of wine. You will understand the characteristics of each varietal used in a specific type of wine. This will help you better understand why you prefer one style of wine over another You will understand why a specific wine enhances certain foods and why the food will also enhance the wine. Have you ever wondered why people swirl the glass and sniff the wine? Is this ritual just an awkward habit of the individual? Or is there a sound reason for doing it? Obviously there must be, or every wine consumer you see wouldn’t be swirling and sniffing. As you begin to understand the ritual of swirling the glass and sniffing it contents, it is also important to understand the style of glass used depends upon the variety of wine. Professional wine glasses have been designed to showcase the different characteristics of each of the varietals being tasted. The engineering (shape) of the glass and its relationship to the wine will enhance your overall tasting experience. Wine labels can be very daunting. The course will teach you how to read wine labels. For example you will learn the difference between geographical (French) labels and varietal labels (most other countries). The information given on wine labels, if understood, will tell you much about the wines within the bottle, where it comes from, the vineyard, year and blends within. The Classic Wine School Instructor, Richard Matthews, will help to make this more understandable. You will become familiar with the terminology of wine. Words such as nose, body, finish, tannins, legs are examples that will help you better understand what you are consuming. You will taste many actual wines during the course, and in doing so you will discover that wines are like people. Based upon first impressions, when first introduced, you decide immediately that you do or do not like them. Others you find have the underlying qualities you look for, but they need more time to grow and mature. They’re just too young. Then you meet one that you know instantly you do not like. You want nothing to do with them, not now, not ever. They’re simply bad! By tasting the wines during each class, the school will help you build your own profile of wine preferences. The course curriculum offers five different classes over five weeks. Classes are generally held on Monday evenings from 7:00 p.m. to 9:00 p.m. You are encouraged to sign up for the entire course. Individual classes can be selected. Payment is expected prior to starting the course of class. Space is limited. There will be no refunds. If a class is missed, make-up classes can be schedule. The Courses (5 classes) and or individual classes include: 1 – White Wines, 2 – Red Wines, 3 – Blended Wines, 4 – Sparkling Wines, 5 – Wine and Food Pairings.
